What exactly is kombucha, anyway?

Is there alcohol or caffeine?
While ethanol is a natural byproduct of fermentation, Brew Dr. Kombucha has developed a proprietary way to carefully control the alcohol content, making sure all of their kombucha is well below the limit to be sold as a non-alcoholic beverage.
And while kombucha starts out as brewed tea, most of the caffeine is consumed during fermentation.
